Baked White Fish with Grilled Vegetables

Pre-heat the oven to 200 degrees. Gently fry the leek in a pan for 5 minutes and then spread evenly in a casserole dish. Season the fish on both sides with salt and pepper and lay on top of the leek. Finely slice the mushrooms and place over the fish. Place the dish in the oven and bake for around 12 minutes. Add the sliced tomatoes for at least 2 minutes. Take the dish out of the oven, scatter the Italian herbs over the tomatoes and serve on two plates.
