Beef Tartar Burger with Sauted Vegetables

Remove the outer leaves and hard core of the chicory and slice finely. Dice the onion, quarter the mushrooms and fry in a non-stick (grill) pan over a high heat until golden brown. Keep stirring to prevent them burning and if necessary add a little water. After around 2 minutes, add the chicory. Stir-fry the vegetables until tender and remove from the pan. Seal the beef tartar burgers by frying both sides for one minute over a high heat. Make sure that you don’t overcook them. Lower the heat, fry for another 30 seconds and season with salt and pepper. Serve together with the vegetables on two plates.
