Caesar Salad with Crispy Chicken, Hard Boiled Egg and Anchovy

Slice the chicken breast. In a deep bowl, whisk 1 egg with salt and freshly ground pepper. Dip the sliced chicken in the egg and then roll in the breadcrumbs. Heat 2 tablespoons of olive oil in a frying pan and fry the chicken until golden for 5 minutes, turning regularly. Mash 2 anchovy fillets in a wide dish, mix the garlic (crushed) and yoghurt with the anchovies, squeeze in the lemon and whisk to make a dressing. Slice the lettuce and mix with the dressing. Place the sliced chicken, the hard boiled eggs (in wedges) and the remaining anchovy fillets on top and scatter with grated Parmesan.
