Carpaccio with Tangy Rocket Salad

Slice the rocket and place onto two plates with the carpaccio. Tip: remove the carpaccio from the fridge in advance to allow the flavours to develop at room temperature. Wash and strip the basil leaves from the stems and use to garnish the carpaccio. Cut the grapefruit in two and sprinkle a bit of the juice over carpaccio. Cut the rest of the grapefruit in wedges and place on the two plates. Grind some black pepper over the carpaccio.
