Fresh Spinach Salad with Chicken Breast From The Wok

Hard boil the eggs for around 7 minutes, cool in cold water and slice lengthwise. Dice the chicken breast, season with salt and pepper and fry in olive oil until golden brown. Finely chop the onion, slice the cherry tomatoes and olives and put the washed spinach in a bowl. Mix the ingredients, drizzle with a little balsamic vinegar and season with salt and pepper. Arrange on two plates and top with Parmesan shavings just before serving.
