Grilled Shrimp

Grilled King Prawns with Fresh Salsa

Dice the tomatoes, red onion and cucumber and sprinkle with the juice of half a lime. Chop the mint and add to the salsa. Then crush the garlic, finely chop the red pepper and fry for 30 seconds over a high heat. After 30 seconds, add the prawns and fry for another 3 to 5 minutes until the prawns are bright pink. Serve the prawns and the salsa on two plates garnished with the reserved lime wedges and some mint leaves.
