Modern Veal Stew with Onion and Broccoli

Dice the veal and marinate with the ground cloves, coriander, cumin, (crushed) garlic, salt and pepper. Slice the onions and add to the veal. Leave to stand until some liquid appears and put the mixture into a casserole. Cover with beef stock and simmer for 30 minutes. Drain the liquid into a pan and reduce until halved in volume. Add to the meat, producing a rich jus. Wash the broccoli and slice into florets. Cook until just tender. Serve the stew in two deep plates, top with the broccoli and add the gravy.
