Omelette with Fried Onion, Mushrooms and Chives

Fry the mushrooms and onions until golden brown – perhaps using a non-stick sheet or spray. Separate and discard the yolks from 2 eggs and whisk the 2 whites with one whole egg. Add the egg with the extra whites to the pan, season with salt and pepper and garnish with the fresh chives. You can of course add various vegetables to your omelette
