Scrambled Eggs with Mushrooms, Smoked Beef and Fresh Chives

Whisk the eggs with 1 tablespoon of milk. Heat the butter in a frying pan over a low heat and fry the mushrooms (chopped) until golden brown. Add the eggs and stir gently with a wooden spoon until the eggs have just set. Slice the ham and add to the egg mixture. Take the pan off the heat and stir in the rest of the milk. Season with salt and pepper and scatter the chives over the scrambled eggs.
