Thai Beef Salad with Seaweed and Tamarind Dressing

Mix the ingredients for the dressing, apart from the oil. Once you have a smooth mixture, add the oil, constantly stirring, to get a nice thick dressing. Then chop the pepper and pak choi and stir-fry over a high heat with the garlic and sesame oil. Leave to cool and mix with the beansprouts and the cucumber (sliced lengthwise with a peeler). Mix all the ingredients with the lettuce and the dressing and serve on two plates. Then arrange the roast beef over the salad and garnish with the seaweed.
