Vegetable and King Prawns Brochettes

Fry the king prawns for 2 minutes over a high heat. Slice the vegetables and slide onto the satay sticks, alternating with the king prawns. Puree the oil, thyme and garlic with a stick blender to make a herb oil. Then grill the brochettes for 5 minutes in the grill pan, under the grill or on the barbecue (turn regular). Serve the 4 brochettes on two plates and sprinkle with the herb oil just before serving.
