Roast the pine nuts in a frying pan until golden and transfer to a plate to cool. Mix the oil and vinegar to make a dressing and add salt and pepper to taste. Coarsely chop the rocket and mix in a bowl with 1 tablespoon of -dressing. Arrange the carpaccio on two plates and place the rocket in the middle of the plates. Finely chop (half) the red onion and scatter the caper, sun-dried tomatoes, grated Parmesan and pine nuts over the carpaccio. Drizzle with the dressing and season with salt and pepper.
