Dice the meat and fry briefly with the chopped onions and garlic. Finely slice the ginger and add to the meat. Add water and a drop of vinegar to the meat, along with the lemon grass, 2 tsp sambal, turmeric and a little salt. Cover with a lid and simmer until the sauce has thickened. Meanwhile blanch the beans in cold water. Then fry briefly with 1 tsp olive oil and 1 tsp sambal and scatter with some grated coconut. Serve the meat with the beans on two plates.
Tip : delicious with brown rice and cucumber.
